Remember the roasted heirloom tomato soup that I made a few weeks ago? Well, other than it being a great soup for a cold day, it can also be used as a delicious dipping sauce, elevating the lowly grilled cheese to a whole new level.
To make my own version of grilled cheese, I use sourdough bread (instead of the usual Texas toast), butter it with home-made garlic butter and use sharp cheddar or in this case, Colby-Jack cheese , a mellow yellow and white mix of Colby and Monterey jack cheeses. Colby is similar to cheddar but is softer and milder. Combine this with the roasted heirloom tomato dipping sauce (sprinkled with some chives) and you get one of the best-tasting and simple-to-make appetizers that I know of. Try it.
