Sautéed Garlic Squid - Simple, Quick & Delicious

Squid is a nutritious source of protein with relatively low fat content. In its typical fried calamari form, the total calorie count is approximately 150 per serving. When sautéed in olive oil, that number is much less. While deep-frying squid (or calamari) may be more popular, it is also a more involved cooking process than I would like. Sautéing is much quicker, less messy and just as delicious.

Here are the list of ingredients for this dish:

1 lb. cleaned squid (cut into rings)
6 cloves garlic (chopped fine)
2 tablespoons lime juice
1/2 red bell pepper (cut into small cubes)
2 tablespoons olive oil
Scallions/chives (chopped fine)
Salt & pepper

Start by sautéing the garlic and bell pepper in a hot pan with the olive oil for less than a minute. The garlic should not be cooked until it browns, lest it becomes bitter. Then add the squid and do a quick sauté (less than 30 seconds) and take it off the heat. Add the lime juice, taste and adjust the seasoning with salt and pepper. Transfer  to a plate and garnish with scallions or chives.

And there you go, sautéed garlic squid. Yummy and quick!
